■Comments from Mercure Nagano Matsushiro Resort & Spa Chef Masahiko Narita
When I talked about menu development, I thought frankly, "It looks interesting." I received materials from a curator in Nagano City and used them to create menus, but the amount of materials was large and I lacked knowledge, so I had a very difficult time reading the contents of the menus in the literature . This time, `` Tonosama Gozen '' selects two or three dishes from the dishes offered at the milestone banquet at the time, and arranges the Honzen dishes at the time in a modern cooking style, consisting of one to three tables It is composed. It was a story of reproducing the menu from the middle of the 1800s (late Edo period), so we collected local ingredients as much as possible and made it with a cooking method that seems possible even at that time. I would be happy if you could think of that era and enjoy cooking together with the space such as the garden and architecture of Sanada's House with the feeling of becoming a palace.

■About 'Sanada House'
At the end of the Edo period, a building called a new palace built by the 9th feudal lord Yukinori Sanada for his mother-in-law (Sadashoin) is the only building in Matsuyo Castle that remains as it was at that time. It was transferred to Nagano City in 1966 along with treasures from the Sanada family. It is a palace building that has few palace buildings in Japan, and has become a nationally designated historic site.
