I received materials from a curator from Nagano City and used them in creating menus, but because of the large amount of materials and lack of knowledge myself, it was very difficult to read the contents of the menu in the literature . This time, "Tonosama Gozen" was composed of 1 to 3 dishes selected from the dishes offered at the milestone banquet at the time, and the Honzen dishes at that time were arranged in a modern cooking style. I am. It was a story about recreating the menu in the middle of the 1800s (late Edo period), so we collected local ingredients as much as possible and made it with a cooking method that seems possible even at that time. I would be glad if you could enjoy cooking together with the space such as the garden and architecture of Sanada's House, thinking about that era and feeling like you became a palace.

■About "Sanada House"

At the end of the Edo period, a building called the new palace built by the ninth feudal lord Yukinori Sanada for his mother-in-law (Sadamatsuin) is the only building at Matsuyo Castle, leaving the original figure. In 1966, it was transferred to Nagano City with treasures from the Sanada family. It is a small palace building in Japan, and has become a nationally designated historic site.
